Produced by Jairo Arcila at Casa Negra, this coffee features the increasingly celebrated Chiroso variety—native to Antioquia, Colombia, and recognized for its exceptional cup quality and unique aromatic profile. Grown at high altitude and processed using a carefully controlled anaerobic fermentation, this microlot is a vibrant expression of innovation in Colombian coffee.
During processing, the cherries are fermented in sealed tanks devoid of oxygen, encouraging the development of deep fruit and sugar-driven notes. After fermentation, the coffee is dried under controlled conditions to preserve clarity and sweetness.
Cup profile:
Rich and fruit-forward with notes of plums, dark cherries, molasses, and brown sugar. Balanced by a smooth structure and well-integrated sweetness.
