A refined naturally processed Geisha from Finca Camiseta in El Salto, Boquete, Panama. Harvested at 1,780 m.a.s.l. on 2 February 2026, this lot reflects the high-altitude conditions and deliberate slow-drying approach of the El Salto area.
Freshly harvested cherries were floated and meticulously hand-sorted to remove under-ripe, dried, and defective fruit before being placed whole on African beds. The coffee dried gradually, first exposed to the cool local breeze and then shaded on raised beds for 27 days. The drying was completed with 12 hours in a static dryer at 36°C. At milling, the coffee reached 10.5% moisture and was further sorted by size, density, and hand selection.
The extended whole-cherry drying process is designed to build sweetness and fruit depth while preserving Geisha’s floral character. Expect a layered, aromatic cup with ripe fruit sweetness, delicate florals, a smooth, rounded texture, and a long, elegant finish.
