Panama Finca Deborah “Illumination” – Grown by Jamison Savage at Finca Deborah in Panama’s Volcán (Boquete/Chiriquí) region, at approximately 1,900 m above sea level. This Gesha coffee undergoes a meticulous washed Carbonic Maceration (CM) process—a hallmark of Jamison’s innovative approach to fermentation.
The cherries are hand-picked at peak ripeness (21–24 °Brix), depulped, and then fermented in CO₂-rich tanks with careful control of pH, temperature, and CO₂ levels. After fermentation, the beans are washed and gently dried on shaded raised beds until the moisture reaches about 11 %,then rested in grain‑pro bags to harmonize the flavor before.
Flavor profile: A clean, invigorating cup with pomegranate, nectarine, jasmine, black tea, stone fruit, citrus, and creamy mouthfeel—sparkling acidity meets elegant florality .
Recommended brew method: Filter (e.g., V60) to showcase its clarity, floral brightness, and layered fruit character .
