Hacienda Cañas Verdes – Abu Coffee – Geisha Double Phase + Mosto Honey GW-3400
This extraordinary Gesha coffee comes from Hacienda Cañas Verdes, under the care of José Guillermo Luttrell Tedman, in Boquete, Panama. At high altitude, surrounded by volcanic soils and cooled by mountain breezes, this terroir delivers the perfect environment for Gesha to develop its floral elegance and vibrant fruit complexity.
For this lot, cherries were selectively handpicked at peak ripeness and underwent a meticulous double-phase honey process. First, the whole cherries were fermented for 24 hours in open tanks, initiating natural yeast activity. They were then pulped and macerated for 48 hours in a wet anaerobic environment inside closed tanks, enriched with mosto(must) from the Gesha process to rehydrate the cherries and preserve integrity of flavor. Finally, the parchment coffee was carefully dried on raised African beds under the sun for 25 days, achieving remarkable balance and clarity.
Cup profile:
A refined Gesha with deep floral aromatics and layered sweetness. Expect notes of jasmine, apricot, melon, lime, honey, grapefruit, lemongrass, and bergamot, complemented by orange candy and a syrupy body. The finish is clean, juicy, and beautifully balanced.
