Colombia Gesha Natural “Wild Citrus”

A vibrant and expressive experimental coffee from Sebastián Gomez’s La Divisa farm in Circasia, Quindío, Colombia. Grown at 1,700–1,800 m.a.s.l. in volcanic-ash soils, this Gesha combines the variety’s elegant floral character with an innovative lychee and wine-yeast fermentation.

Only the ripest cherries were selected for this lot. After flotation, the whole cherries underwent 72 hours of dry anaerobic fermentation with the pulp on, together with fresh lychee and wine yeast. The cherries were then slowly sun-dried in parabolic dryers for approximately 10 days, with regular turning to ensure even drying and consistent quality.
