Panama / Gesha
La Estrella / Giovana Boutet
Depulped
From the picturesque region of Los Naranjos, Boquete, at an elevation of 1,600 meters above sea level, this Geisha comes from Finca La Estrella, owned and managed by Giovana Boutet. Cultivated in Boquete’s fertile volcanic soils, the lot reflects the precision and innovation of modern Panamanian coffee craftsmanship.
The cherries were hand-harvested at peak ripeness and carefully depulped before entering controlled fermentation. Using mosto Cris_Geis_120_181, the fermentation was carried out in custom-built stainless steel tanks for 3.7 days at an average temperature of 12.75°C, ensuring clarity and complexity. Following fermentation, the coffee was transferred to temperature- and humidity-regulated drying rooms for a slow, even 13.6-day drying process, preserving its refined aromatics.
Cup profile:
A structured and elegant Geisha with layered florals and fruit brightness. Expect notes of jasmine, citrus zest, and ripe stone fruit, lifted by sparkling acidity and a clean, lingering finish.
Body & Acidity:
-
Body: Silky, delicate
-
Acidity: Vibrant, citric, and well-integrated
Recommended brew method:
Best suited for filter brewing methods (V60, Kalita Wave, Origami), where its refined florals, crisp fruit notes, and sparkling structure can fully express themselves.
