Panama Mount Totumas – MilkyWay Gesha – Washed with Extended Fermentation
Grown at Mount Totumas in the Chiriquí region of Panama, this exceptional Gesha coffee is cultivated at an elevation of 1,800 meters above sea level by producer Karin De La Rosa.
The cherries are harvested at peak ripeness and undergo a meticulous processing method. Initially, they are depulped and then fermented in spring water for 24 hours. Following this, the cherries are placed in a closed container for an additional 24-hour fermentation. After fermentation, the beans are dried on indoor beds for 5 weeks, with the drying process completed in a dehumidifier over 72 hours, ensuring optimal moisture content and flavor development.

This coffee offers a delicate and complex flavor profile with notes of grapefruit, apple, blackberry, Earl Grey tea, and white florals, showcasing the unique characteristics of the Gesha variety.
