Panama Finca Deborah “Nirvana” – Grown by Jamison Savage at Finca Deborah in Panama’s Volcán, Chiriquí region, at approximately 1,900 m above sea level. This exceptional Gesha coffee undergoes a precise Natural Nitrogen Anaerobic process, where cherries are sealed in nitrogen‑flushed tanks for around 50 hours to eliminate oxygen and promote a slow, controlled fermentation .
Post-fermentation, beans are dried on raised, shaded beds for about 20 days until approximately 11 % moisture, then rested in grain‑pro bags to stabilize the flavor.
Cup profile: Complex, syrupy sweetness with vibrant fruit. Tasting notes often include strawberry jam, red grapes, pineapple, blackberry, and other layers like cherry wine, lychee, tropical fruits, or dark chocolate depending on the roaster .
Recommended brew methods: Both filter (e.g., V60) and espresso—filter highlights clarity and fruit layers, espresso emphasizes body and sweetness .
